Greens & Shitake Stir-fry
1 tablespoon toasted sesame oil
2 cloves garlic, minced
1 small onion, halved and sliced thin
1 (7 ounce) can water chestnuts, drained and thinly sliced
5+ shiitake mushrooms, sliced (if using dried, soak, discard the stems and slice); other mushrooms may be substituted
1 bunch bok choy
1 bunch kale, washed and cut into large pieces
1 teaspoon mirin (or seasoned brown rice vinegar)
2 teaspoons coconut aminos or tamari (or high quality soy sauce)
Freshly ground black pepper, to taste
Crushed red pepper flakes (optional)
*Add in other vegetables to your liking such as bell pepper, snow peas, carrots, etc
*Add a protein source such as beef or chicken to create a complete meal
Heat oil in a large skillet over medium high heat.
Add onions and sauté until onions are translucent (about 5 minutes).
Add garlic and sauté 1-2 minutes more.
Add any other desired veggies and sauté until almost tender.
Add water chestnuts and shiitake mushrooms and sauté for for 2-3 minutes.
Add kale and bok choy.
Add mirin, coconut aminos/tamari and pepper and continue cooking until greens are wilted.
Season with black pepper and red pepper to taste.
